A course presenting cool summer vegetables and ashitaba leaf tempura in Tokyo salt. For dinner, Tokyo Shamo chicken with its rich umami cooked in goes well with homemade soba noodles.

Plate of five appetizers

Skipjack entrails with egg yolk resembling the light of the fireflies,

winter melon and chicken soup, soybean tofu

Two dishes of the day

Sashimi:

Vinegared amberjack, garnish

Chilled dish:

Boiled summer vegetables

Steamed dish:

Steamed Tokyo Shamo poultry

Tempura:

Shrimp, whitefish, three vegetables including Tokyo ashitaba,

Served with Tokyo salt

Main dish:

Homemade soba noodles, broth, and garnishes

Dessert:

Soft rice ball and buckwheat dessert, fruit
